How many of you have eaten Avocado Toast recently?? Yes it seems to be the rage lately and I see different versions all over Pinterest, on various blogs, and now you get my version. I’ve been told I make a pretty mean avocado toast by various friends, but especially my special friend Lisa, mother to John Paul.
Tuesday has turned out to be my Favorite day of the week. Why Tuesday? I get to watch William, my good friend Sarah’s precious baby.
So what does watching William, seeing my dear friend Lisa and her precious nugget almost weekly have to do with Avocado Toast? Well, I have discovered watching a baby is VERY BUSY; so making this simple, but nutritious lunch is not only yummy, but super easy, fast and convenient to prepare and eat. Lisa asks me every week, “What is my secret?” She says her avocado toast never tastes like mine. I giggle, but honestly its the easiest and most delicious lunch ever and I am happy to share it with you. Please comment below and share your favorite recipe for Avocado Toast.
Seriously…this is all I do. Toast some Sprouted Sesame Ecekiel bread, spread it with some Avocado, sprinkle it with an herb sea salt blend and a bit of fresh ground pepper, and finally, layer on a piece of Manchego Cheese. Broil briefly to melt the cheese and the best part…….Eat with Love.
This happens to be my go to lunch when I have a busy day. In fact I bet I have it a few times a week. You can branch out and try some of the ones pictured (avocado toast 4-ways) if you’d like but nothing in my opinion tastes as good as MY MEAN AVOCADO TOAST:-)
However this is a close second but takes a bit more time since it includes some yummy roasted grape tomatoes and a runny egg. Yummy………my favorite Post Long Run Meal! Do you have a favorite meal you look forward to after a long run?
I love everything about Life in general which is why staying healthy is important to me.
