Remember those guacamole paste ingredients that never got used for a planned guacamole but turned into a very delicious Cauliflower Rice Side Dish?
Well the other night I soaked some oats to make a very hearty and delicious bowl of oatmeal before a long run. Unfortunately I was a bit queasy that morning so I opted for sprouted ezekiel toasted with almond butter instead, (and yes, my run sucked that morning). In any case, since I had all these oats sitting there soaked but didn’t get used, I decided to try throwing some in my smoothie the next morning after my run.
Holy cow…..seriously why did it take me soooo long to try a smoothie with oats? “Take overnight oats to a whole new level with this Blueberry-Lemon Oatmeal Smoothie. You’ve never had oatmeal like this before! At least I haven’t! This thick and creamy breakfast smoothie combines that stick-to-your ribs feeling of a bowl of oatmeal, but its smooth and creamy like a smoothie should be?. It truly kept me satisfied for hours.”
I have seen tons of other recipes for smoothies with oats, but for whatever reason, I haven’t tried one up until now. Since my friend Sarah and I had a recipe which included oats in a past (and future smoothie workshop), I thought, no time like now to try one right?...yes right! One of our recipes included a Blueberry Lemon Smoothie which I fell in love with, but with the addition of oats, it’s just like drinking a blueberry muffin or a scone. I can’t make up my mind…I guess I’ll have to have another tomorrow and let you know. Darn!
I know I’ll be soaking more oats for my morning smoothies! They not only make the smoothie you’re drinking thicker and creamier, but the stick to your ribs texture of this smoothie makes you feel like you’re drinking something much more substantial. My husband says “it’s like drinking a milkshake, but without all the sugar and bad fat!” True…but the creamy doughy consistency of this smoothie makes me think scone (or a muffin), your opinion would be very appreciated?. Please comment…I am just so curious to hear your thoughts.
And please don’t forget to add greens to your smoothie like me. You not only get yummy antioxidants from all those delicious wild blueberries, but extra fiber and protein from your greens. Yep, there is protein in greens too! How cool is that! From there, I also added in a banana for some natural sweetness. Finally the addition of a Meyer lemon to this smoothie gives it a fresh and vibrant taste…refreshing and spring like?.
And just like in our workshops, you can also freeze individual smoothie packs in a Ziplock bag using your favorite combination of fruits. You can have a different smoothie every day, and it doesn’t get easier than throwing everything straight from the Ziplock bag to the blender! There’s absolutely no thawing needed. All you need to is add your milk and a spoonful of soaked oats when you’re ready to blend. Easy peezy right?! So convenient to have your post run shake or snack prepped and ready to go!

BLUEBERRY-LEMON OATMEAL SMOOTHIE
INGREDIENTS:
- 2 Scoops Vanilla Shaklee Life Energizing Shake mix (for vegan option use the Non-Soy Vegan Shaklee Life Energizing Shake)
- 1/2 of a frozen banana
- 1/2 of a small Meyer lemon or 2 drops of Food Grade Lemon Essential Oil
- 1/2 tsp of vanilla
- 1/3 cup of oats that have been soaked overnight preferably or 1/3 cup oats (I use Gluten Free)
- 8 ounces of almond milk or beverage of choice (I use half milk and water)
- ice if desired
DIRECTIONS:
Place all ingredients in your high speed blender and blend until smooth. If you would like a bit more sweetness, feel free to add a little honey or a small date. I also added a handful of power greens to mine and some flax seed.
