NuttZo Chocolate Protein Bites

I am nut-so for NuttZo!  Have you tried this stuff?  Seriously the most addicting Nut-Butter I have ever tasted.  Consider up-grading your almond butter friends since this has to the best thing next to heaven… creamy, crunchy and incredibly delicious.

Creamy but Crunchy! OH YES!

I am kind of a NUT BUTTER addict! If you read this post, you’ll know why.  I mean seriously, how can a runner survive without their favorite nut butter?

My favorite Nut Butter!

Even if you’re sensitive to nuts, sunflower seed butter or tahini butter make a great pre-run, or post-run snack, “don’t you think?”  

Super EASY when you use your handy-dandy food processor or blender.  Throw everything in but the oats and blend.

Recently I found this new NuttZo Power Fuel, which I hide from my husband by the way, and I just can’t get enough of it! I eat it by the spoonful, throw it in smoothies, stir it in oatmeal, stuff my dates, and of course, the famous sandwich!  The crunchiness of the flax and chia seeds seriously take this stuff up a notch…or two.  Bamn!

It’s taken me awhile to make Protein bites with this stuff because I wasn’t too keen on running out since most recipes for protein snacks require at least 1/2 cup.  This is precious stuff and I didn’t want to use it all up!  However, since my stock pile is growing because I keep ordering it in case for some reason it is no longer available…GOD FORBID, I decided I could spare some for these tasty treats.

So next time you’re in the mood to make protein bites, replace your nut-butter with Nuttzo Butter.  I promise even your kiddos will love them.  My Tuesday playmate happened to enjoy not only helping me, but couldn’t wait to try one…or two.

Who am I kidding!  I can never stop with just one either!  ENJOY!

NUTTZO PROTEIN BITES (Serves: 16-17 bites)

INGREDIENTS:
  • ½ cup NuttZo Butter
  • 1 cup gluten free oats
  • 4 or 5 dates (about 1/2 cup)
  • ¼ cup honey
  • ½ teaspoon vanilla
  • ¼ cup ground flax seeds
  • ½ cup dark chocolate covered espresso beans or these
  • 2 to 3 tablespoons of protein powder, I used the Shaklee Vegan Plain and Simple
  • 1/2 cup chocolate chips (optional)
INSTRUCTIONS:
  1. Soak your dates in Hot water for approximately 5 minutes.  Drain and pit.  Place the dates in a bowl of a food processor and process until smooth, about 3 minutes.  Add the NutttZo Butter, honey, and vanilla.  Process again.  Add the Espresso Beans, (or chocolate chips, or dark chocolate covered cocoa nibs), and flax seeds, process a few times just to break them up a little bit.  Transfer to a medium-sized bowl.
  2. Add in the Shaklee Vegan Plain and Simple Energizing Life Shake and oats.  Stir until everything is incorporated.  This is where you get to play like a kid again and get your hands messy.
  3. Form the mixture into balls that are about 1 to 1½ inches. Store in the refrigerator for about a week or in the freezer for longer.
