Most of my smoothie recipes on AvocadoRunners are made with frozen (green) bananas because I love how they give my smoothies that perfect thick and creamy texture. Besides, bananas have incredible health benefits, and if you’re using green tipped ones, they are lower in sugar and more of a resistant carbohydrate than yellow/riper ones.
Lately however, I have been experimenting with using frozen veggies instead. Talk about YUM! Plus by adding vegetables to your smoothies, you’ll be benefiting from healthy fibre, tons of antioxidants, vitamins and minerals, all of which aid in digestion, promote healthy skin and support immunity. What’s not to love about that! And they taste just as good!
And if you haven’t noticed, I love BIG smoothies and smoothie bowls and by adding veggies like cauliflower, zucchini, sweet potato, I can enjoy the serving size I LOVE but keep the carbs or glycemic down. Win Win!
Did you know cauliflower is one of the healthiest foods out there? Yep! Loaded with Vitamin C, K, B6, folate, and so much more. I am all about eating more veggies and so I finally jumped on the band wagon have been adding FROZEN cauliflower to my smoothies almost daily.
Since the the flavor of cauliflower is so subtle, it easily gets masked by the addition of the other ingredients and is perfectly creamy and flavorful without adding fruit. So if you are watching your sugar, cauliflower has only 2 grams per serving whereas a banana can have up to 15 grams (only 5 grams for green).
For this smoothie I am also using some of my hubby’s left over cold coffee! WOOT WOOT! So this is for all my coffee lovers and chocoholics out there. This will certainly be your new favorite breakfast!
Cauliflower, strong brewed coffee (is there any other kind), cocoa powder, and almond butter all make for a very nutritions breakfast that will boost your energy and keep you satisfied till lunch time and beyond!
I am using unsweetened Vanilla Almond milk which I really believes enhances the mochaness of this smoothie. The medjool date gives it just the right amount of natural sweetness too. Next time I make this I must may use full fat coconut milk with a splash of vanilla. Doesn’t that sound YUMMY!
Next I tossed in a scoop of these amazing dehydrated Organic Greens to give my smoothie bowl even more “green” power and a big BOOST. You’re going to love these!
Now lets chat about smoothie bowl toppings. YOU GUYS! I just love crunch on my smoothie bowls. Mandatory! You can use hemp seeds, grain-free granola, crispy nuts or seeds, cocao nibs (YES PLEASE). You decide. Fresh berries? Why not?
BREAKFAST OF CHAMPIONS. SO PERFECT AFTER A LONG RUN or ANYTIME!
INGREDIENTS
- 1 cup cauliflower florets steamed and frozen
- 1/3 cup strong brewed coffee chilled, (thank you Rob)
- 1/2 cup Unsweetened Almond Vanilla Almond Milk (or full fat coconut milk)
- 1.5 tablespoons raw cacao powder
- 1 pinch ground cinnamon optional
- 1 to 2 tablespoons sprouted almond butter
- 1 date pitted
- Organic Green Booster or fresh greens or both (I use these)
- 1 to 2 scoops of Shaklee Life Protein Shake Mix or Grass Fed Whey Chocolate

INSTRUCTIONS

Steam a head of cauliflower for 5 to 7 minutes, until tender when poked with a fork. Allow the cauliflower to cool, then transfer 1 cup (or the whole head) to a zip lock bag and freeze.
