It’s blueberry time! Every year about this time I am lucky enough to receive freshly picked wild blueberries delivered to my door all the way from Michigan.
Blueberries are not only high in Antioxidants, but are one of my favorite summer time treats! They have a sweet flavor, and they are succulent and nutritious. I love them in smoothies, smoothie bowls, scones, healthy desserts like this one or my favorite anniversary treat! If you haven’t tried them in a grilled cheese sandwich, your missing out BIG TIME!
Since receiving a fresh new shipment, I am once again inspired to create new recipes with blueberries.
Today you’re in for a real treat! I combined two of my favorites, blueberries and avocados to make an incredibly satisfying breakfast in a bowl! I can’t wait for you to try this!
Most often I prefer drinking my smoothies with a straw, but some mornings after a bit tougher workout and or run, I make them a bit thicker. I than pour my mixture into a bowl and top them off with whatever I can get my hands on! HaHa….I am usually so hungry by the time I have my breakfast, I don’t waste much time and just grab whatever is convenient out of my super food cupboard. Sometimes they refer to this as being “Hangry”.
Did you know Blueberries contain a plant compound called anthocyanin which gives blueberries both their blue color and many of their health benefits? Anthocyanin is a type of Flavonoids which is a plant compound that has powerful antioxidant effects.
We all know by now how important Antioxidants are in our diet to fight those nasty little things called free radicals that cause cell damage, oxidative stress and our least favorite “I” word, inflammation. With a bit of intelligent timing, we can harness the power of antioxidants to fight systemic inflammation while also repairing the micro-tears in our muscles caused by running, weight training, interval training, and any other movement you may be doing to maintain a healthy body.
What athlete doesn’t love this! Blueberries to the rescue!
BLUEBERRY AVOCADO SMOOTHIE BOWL
INGREDIENTS:
- 1 to 2 handfuls of fresh spinach
- And/or 1 scoop of Organic Greens Booster
- 1 cup fresh or frozen wild blueberries
- 1/2 avocado
- 1 tablespoon raw cocoa powder
- 1 cup coconut milk (plus water)
- 1 tablespoon Flax seeds
- 1 tablespoon almond butter
- 1/2 Medjool Date (optional)
- 2 to 3 scoops Shaklee Grass Fed Whey Protein (chocolate or vanilla)
Toppings:
- 1/4 cup buckwheat granola or crispy nuts
- 1/4 cup shredded unsweetened coconut
- 1 tablespoon of nut-butter of your choice
DIRECTIONS:
- Add spinach, blueberries, avocado, coconut milk, flax, almond butter, date if using, and whey to a blender and blend until smooth. If the mixture is too thick, add 1/4 cup water at a time until you’ve reached your desired consistency.
- Pour mixture into a bowl and add toppings. Enjoy.
