Sweet Potato Smoothie Bowl

I am officially obsessed with this vegan sweet potato smoothie bowl.  It’s similar to this one but I didn’t have any frozen cauliflower in the freezer so I used 1/2 of a frozen green banana.  If you’re not a banana lover, no worries, sub out a 1/4 of an avocado. The end result will still be ultra-thick and creamy with the most amazing flavour.

It tastes like sweet potato pie…only better and healthier!

If you like drinking your smoothies from a straw, just add a tad more liquid but this one is fabulous in a bowl. I topped it off with some of my grain free granola and ate it with a spoon. This smoothie is plant-based, high in protein, fiber and loaded with nutrition.

Have you tried adding vegetables to your smoothies yet?  I highly recommend starting with sweet potatoes. They are one of my favorites. They add healthy complex carbs and creaminess plus fill you up without adding extra sugar.

Plus they’re loaded with antioxidants and other health-promoting nutrients which we all love, especially runners! This was such a perfect treat after my long run!

Thick! Creamy! Delicious!

To use sweet potato in smoothies, you just need to cook them first and there are a few ways you can do that. I love my sweet potatoes slow roasted like these so I always bake extra than what we need for our meal. After they cool a bit, I scoop out the flesh and toss them into individuals baggies or silicone ice-cube trays so they’re easy to pop into my Vitamix.

You could also steam or boil them. Do freeze them since they’ll make a much thicker and creamier shake.

In this smoothie I also used ZUCCHINI since my CSA box always includes this over populated veggie right now

Another one that passes the floating spoon test!

You can use fresh or frozen zucchini in smoothies.  I like frozen best for creaminess and texture. I am now freezing them raw but if you have a hard time digesting raw zucchini, I’d recommend steaming first. If they’re organic, leave the peel on especially if you have a high-powered blender. If not, you may want to peel to get a more creamy texture.

The flavour of this smoothie is so addictive and just like my other all veggie based smoothie, has just the right spice. It’s hearty and will keep you satisfied all morning! It’s perfect with a little granola and nut butter drizzled on top. It’s sooooo GOOOD!  Not too sweet but just the right amount of sweetness from the frozen banana and my favorite vanilla protein powder.

SWEET POTATO SMOOTHIE BOWL

INGREDIENTS:

  • 1 cup cubed, peeled cooked frozen sweet potato
  • 1/2 frozen banana (60 g)
  • 1/2 fresh or frozen zucchini
  • 1 serving Vanilla plant-based protein powder
  • 1  cup almond or pea milk
  • 1/2 tsp cinnamon
  • 1/2 tsp Pink Himalayan Sea Salt
  • 1/8 tsp freshly grated nutmeg or 1/4 tsp dry
  • 1 tbsp almond butter
  • 1 scoop of Organic Greens Booster (optional)
  • ice (optional)
  1. Blend all ingredients until smooth and creamy. Be careful not to add too much milk if you want it to be thick for a smoothie bowl. To enjoy as a drinkable smoothie use 1 1/2 cups liquid.
  2. Top with your favorite granola….or mine.
