Homemade No-Mayo Curried Salad Dressing

Do you make your own salad dressings? They’re really not hard and they take very little time. And don’t you agree, homemade anything is better than store-bought?

The best part, if you read my last post, you can control exactly what goes in. If you look closely at most salad dressing ingredients, you’ll find sugar hidden in there somewhere…and probably a few more unhealthy ingredients. Plus, by making your own, you’ll save money and of course, homemade is always best!

It is incredibly HOT out today so this kind of heat is perfect for serving salads for supper!  Who would have thought it would be close to 90 degrees in Mid-September and with the humidity, feels like 97°F.  Not me that’s for sure.

So if you’re interested in salad for supper tonight….whether it be a chicken salad, potato salad, large lettuce salad with your choice of protein, or possibly even a tuna salad, I have you covered!  This dressing is fabulous no matter what you mix it with.

The best part, it has no mayo!  It is an oil based salad dressing and it also has one of my favorite spices, turmeric. Turmeric is so good for inflammation and I try to sneak it in whenever I can. Today I decided to add it to my curry dressing.  I think you’re going to LOVE this!

NO MAYO CURRIED SALAD DRESSING 

INGREDIENTS:

  • 2″ knob of fresh ginger or 2 teaspoons of powdered
  • 1″ knob of fresh Turmeric or 2 teaspoon powdered
  • 1 to 2 tablespoons of curry powder
  • 2 tablespoons of grainy mustard
  • 1 tablespoon of Dijon mustard
  • 2 tablespoons of honey
  • 1/2 jalapeno (optional…I like it spice)
  • 1/2 cup apple cider vinegar
  • 1 cup good quality olive or avocado oil
  • Salt and Pepper to taste

DIRECTIONS:

  1. Place all ingredients into a food processor or blender.
  2. Buzz or puree and than with the motor running, SLOWLY add in the oil to emulsify.  Season to taste with salt and pepper.
  3. Use in potato salad, over fresh greens, curried chicken salad, etc.
