How was your Thanksgiving weekend? Mine was a whirlwind of activity but SO much fun!
If you celebrate Thanksgiving, I hope your day was filled with good food, lots of laughter, and of course pie.
My day started out with a treadmill run at the gym followed up with Turkey Day Butts and Gutts. Truly one of my favorite events of the year. Unfortunately I had no family joining me this year but plenty of friends. In fact, 60 other crazy people got themselves out of bed to feel the burn before stuffing their face. Such a great morning.
The rest of the day was spent preparing our Thanksgiving Day Dinner for my husband’s side and also my mom and brother. Rob prepared the turkey on the Green Egg just like this! It was delicious as usual! We had sourdough bread stuffing, Pumpkin Barley Pilaf, roasted Brussels & carrots, and a delicious mixed green salad with Delicatta squash (my fave!) and of course my mom made some desserts.
Since Friday was above freezing, I took advantage of the “bamly” November morning temps with a long 15 mile run. It was glorious. Maybe a bit breezy but this time I had time I had the wind at my back the entire last part of my run. I even finished my last 15 minutes at marathon pace. COOL BEANS!
After my run I received some fun news…….my other brother from South Dakota were on their way with his extended family. What a nice surprise and such a treat to spend time with the little kiddos again!
Goldie, my great niece was such fun too!
“Are you a Rib fan?” These were the talk of the kitchen table…”OMG these are delicious Rob.” These are the best ribs I have ever had.” “WOW these are so tender Rob.” “How did you do these?”
Since I am not a rib fan, I can’t verify for my family, but if a picture is worth a 1000 words, than here you go.
Check out the Three in One method he used. He used apple juice and wood chips. I can guarantee these will show up at Christmas. In any case…try this method if you enjoy ribs.
It was also Small Business Saturday in Hutchinson so we did a little shopping after workout class Saturday morning which was a blast. My niece won a $25.00 gift card to spend at the Village Shop which is the local gift store I hlep out at one day a week. She was so excited!
Saturday was a smorgasbord of everything at my mom’s house. We had such fun!
- Turkey enchiladas
- Creamy Squash Casserole with fresh ginger and orange zest (I need to make this again and share pics with recipe!)
- curried chickpeas (another big hit….can’t wait to make this one again too!)
- roasted duck and stuffing (My mom bought a farm raised duck…the men all enjoyed it…the ladies passed)
- a BIG green salad…of course!
One thing for sure is there was no shortage of food this weekend!
