Cold & Flu-Fighter Lemony Chicken Orzo Soup, Running With a Bad Cold

When you are sick with a BAD cold and your husband too, whats the first food that comes to mind that makes you feel better? Is it chicken soup? Bone Broth? Noodles? All of the above?

May I propose an idea. May this soup become your new Good for you cold and flu fighting Chicken Soup!

When you’re coming down with something, can’t seem to shake a nasty cold, or you just need to give your immune system a boost, this soup has got your back! Our mom’s and grandparents were definitely onto something when they discovered chicken soup for healing properties.

I love this version of the old standby loaded with chicken off the bone of a fresh roasted farm raised chicken, the bone broth from the chicken bones I roasted, lots of veggies, and orzo. The base is smooth and creamy without using dairy. It’s still brothy and perfect for slurpping like any chicken soup should be. It’s satisfying but not heavy. This soup is pure comfort food that is absolutely amazing for when you’re feeling under the weather.

It’s rich and satisfying from the chicken, but the lemon juice, zest, and fresh herbs give it a nice spring touch. Because I also use lots of veggies and orzo instead of the traditional noodles, it’s still chunky and filling leaving you feel like you ate a hearty meal.

It also works like magic since I felt good enough to run the next morning. Trust me, I wasn’t fast and it was more like a jog but the fresh air was good for me too. I also skipped the pick-ups after each mile and kept it easy the entire hour. My run actually called for a minute at 10K pace at the end of each mile. I honestly did NOT feel the least bit of guilt for turning my run into an EASY run.

One more time…MOVE OVER Chicken Noodle Soup and HELLO Lemony Chicken Orzo Soup

LEMONY CHICKEN ORZO SOUP

INGREDIENTS:

  • 1 tablespoon olive oil
  • 3 carrots, peeled and diced
  • 1onion, diced
  • 3 cloves garlic, minced
  • 8–10 cups bone broth
  • 1 cup orzo
  • 3-ish cups shredded chicken
  • 3 farm fresh eggs
  • Juice of 3–4 lemons
  • Handful of fresh spinach
  • 1 1/2 teaspoons Pink Himalayan sea 
  • Lots of freshly ground pepper
  • Fresh herbs, I used fresh parsley

DIRECTIONS:

  1. Heat large soup pot over medium heat. Add the olive oil. Add the carrots, onion, and garlic. Sauté fragrant and tender, about 10 minutes. (Be careful not to burn the garlic.)
  2. Add the broth and bring to a simmer. Add the orzo and cook for a few minutes until softened. Stir in the chicken and remove from heat.
  3. Whisk the eggs and lemon juice together in a small bowl. The idea here is to warm up the egg mixture slowly (without scrambling the eggs). Slowly add a scoop of the soup into the egg mixture. Then add your warmed egg mixture back to the soup pot – slowly, slowly, slowly, stirring constantly, until smooth and creamy. 
  4. Finish by stirring in your spinach, salt, pepper, and fresh herbs of choice. Adjust seasonings to taste!
