Easy Raw Grain-Free Chocolate Sea Salt Granola, Favorite Post Run Recovery Treat

Have you tried making my ultimate favorite & healthy snack….crispy nuts? No worries if you have not, but I have a tasty new granola recipe that will help you get started.

Fresh Colorado Peaches, Greek Yogurt, and my Homemade Granola….PERFECT post run treat!

Yes I do understand making crispy sprouted nuts does take some time, but they are easy and wonderful in so my humble opinion, and definitely worth your time. If you been following me for awhile now, you’ve probably read several posts linking back my lovely crispy nuts. If you have ever tried sprouted nuts before you know what I am talking about. They are crispier, more delicious, and of course, bette for you so my suggestion, try them at least once! You’ll be hooked😋.

Healthy Raw Grain~Free Granola! Chocolate with Sea Salt too! ?

Soaking nuts not only makes them easier to digest, but gives them and undeniable irresistible crunch. I would suggest hiding them from your husband 😉.

This is sooooo GOOD!

In this recipe I soak the nuts overnight, drain, add the other ingredients….dehydrate, and the end result ~ RAW GRAIN-FREE CHOCOLATE SEA SALT GRANOLA that is to die for!

This granola is delicious paired with fresh Colorado Peaches, which are in season now, and your favorite yogurt. It’s a delicious post run treat or anytime snack! Or make my favorite post run treat, a smoothie with granola sprinkled on top.

I am not sure why I didn’t think of this before but as the saying goes…better late than never. Making grain free granola may seem like a long process when craving something crunchy and a little sweet, but I promise it’s worth your time and requires very little work.

If you don’t have a dehydrator like me, it’s easy to use your oven as long as the temp is set at a very low…between 150 and 170 degrees F. A low oven keeps this granola raw and therefore healthier and easier to digest.

DELICIOUS & EASY RAW GRAIN FREE CHOCOLATE GRANOLA

INGREDIENTS:

  • 1 cup raw almonds
  • 1 cup raw walnuts
  • 1/2 cup raw pecan halves
  • 1/2 cup raw hazelnuts
  • 1/4 cup raw pumpkin seeds
  • 1/4 cup raw sunflower seeds
  • 1 tablespoon golden flax seeds
  • 1 3/4 teaspoon pink Hymilanean sea salt
  • 1/2 cup raw honey
  • 3 tablespoons coconut oil
  • 2 tablespoons raw cacoa
  • 1 1/2 tablespoons pure vanilla extract
  • 1 tablespoon cinnamon
  • 1/2 cup shredded, unsweetened coconut
  • 1/4 cup dark chocolate chunks
  • 1/2 cup freeze-dried strawberries or blueberries optional

DIRECTIONS:

  1. Place all nuts and seeds in a bowl, add enough water to cover by 1 inch, and stir in 1 teaspoon of salt. Cover and soak for 24 hours room temp.
  2. Drain the nuts and seeds and place on a paper towel to absorb the remaining water. Transfer to the bowl of a food processor and pulse the nuts a few times to chop roughly
  3. Place the honey, coconut oil, cacao, and vanilla in a small saucepan over medium heat until the cacao has dissolved. Add to the food processor with the cinnamon and remaining salt. Pulse once or twice to combine.
  4. Pour the mixture into a bowl and mix in the coconut with a spoon. Turn the mixture out onto 3 parchment-covered dehydrator trays or use your oven. Spread evenly.
  5. Dehydrate at 120 for 24 hours. Turn the granola with a spatula a couple times. The granola may be a bit sticky but will crisp up after cooling. See below if using your oven
  6. Transfer to wire racks and cool completely.

TIP: To dehydrate in the oven, place the granola on 2 or 3 parchment-lined baking sheets in the oven at 150 degrees F. Use a wooden spoon to keep the oven door open a crack to let the moisture out. After 2 hours stir the granola carefully. Dry for two more hours. Turn oven off. Dry for 2 more hours with oven door closed.
