This cauliflower sandwich is the BOMB! All you need is a nice head of cauliflower, your favorite sandwich fillings, and an appetite❤️?.
You may think I am crazy, but this veggie lover is looking forward to a heaping tablespoon of nut-butter?. Oh and a big hunk of sourdough bread most likely smothered in butter. At least I am honest! Yes I love veggies and it’s amazing how creative one can get, and yes I am feeling great but I am excited for something other than vegetables?.
In all seriousness, my husband and I are currently on day #6 of our 7 day healthy cleanse and I have to admit, it’s going as well, if not better than our first time around. We are super pumped to start step #2 of our PROVE IT CHALLENGE Friday.
Because I am training for another marathon, I am adding in a scoop of my favorite plant based protein to my morning veggie/fruit smoothies. I think it’s important to give my muscles the extra protein they need right now from long hard runs and I also don’t need to loose any weight.
These Cauliflower Steak Sandwiches was one of the most requested recipes after posting in our private facebook group during our 7 day cleanse. Trust me, they taste as delicious as they look. Totally the BOMB!
They are super simple to make but make sure you purchase the BIGGEST head of cauliflower you can find.
The first step is trim away the leaves and then cut the stem straight so it sets up-right. Now make 4 cuts straight down about 1/2 inch width into 4 nice size cauliflower steaks.
You’ll baste these with an olive oil dressing, roast for 20 minutes, then turn, roast again for another 20 minutes. That’s it. Now the fun begins. Build your sandwich. SO SO TASTY!
CAULIFLOWER STEAK SANDWICHES
INGREDIENTS:
- Cauliflower Steaks (1 head cut into 4 slices)
- 2 tablespoons olive oil
- 1/2 lemon juiced
- 1 garlic clove minced
- toppings optional..oven roasted mushrooms, homemade guacamole, fresh tomato, sprouts, spinach or romaine leaf, caramelized onions, oven roasted mushrooms (used a little olive oil)
DIRECTIONS:
- Preheat oven to 400 degrees F.
- Trim leaves from cauliflower and cut stem to allow to set up right for ease of cutting into steaks. Cut 4 1/2 inch slices.
- Combine olive oil, lemon juice, minced garlic, salt and pepper. Baste steaks and place on parchment lined baking tray.
- Bake 20 minutes. Remove. Carefully turn and bake another 20 minutes.
- Let the fun begin……Start building your sandwich.
