White Bean & Tuna Salad with Creamy Avocado, Good and Bad Runs, Pumpkin Spice with Turmeric

Did summer make another appearance in your neck of the woods this past week? OMG, it certainly hit us hard here in Minnesota. We had heat, humidity, and of course storms. I am not one to complain, especially since our summer was so short, but it sure made it for some tough run this past week. And the flooding that is taking place is so sad. Shaklee Cares is working in full force!

In fact, my last long run was one of my difficult ones. It’s the first run where I actually had to stop dead in my tracks. I walked, jogged, walked some more, and to be perfectly honest, tried my best not to cry. I was TOAST.

Most of my runs this training season have been on the positive side. They have lifted me up and even when I had a rough patch on a longer run, I finished strong smiling. Not this run. But it’s OK! I will be OK!

Yes it was warm with temps in the 70’s, which really isn’t that bad since I have run in much warmer temps. However, hours after my run I discovered it was also almost 100% humidity. I did recall the air felt heavy but had not idea it was that humid. Anyhow, I did my best to shake it off, rest, recover, and told myself one bad run won’t define me, my race, or my fitness. So I went on with my day.

I have put in the work. No matter what happens on race day I know I did my very best to get there and I will just go out & have fun & do my very best. That’s Enough.

Unfortunately taper madness is really messing with my head right now. My left foot also started acting up again. I am trying to say positive, rest, ice, and most importantly, not let this small set back take away from my joy.

Perfect weather for this delicious salad! Not perfect running weather however?.

I have also been trying my best to get in all my macros, specifically more protein. My shakes in the morning help a ton. It may not seem like Pumpkin Spice weather, but this new shake mix is AWESOME! If you’d like to try some, don’t hesitate to send me an email. I LOVE THAT this version now has Turmeric which is anti-inflammatory! Plus a full 20 grams of plant based protein! YEAH! Just what I need!

Sometimes lunch and dinner are tough but my go to protein, as you probably guessed, is runny eggs. They are easy and loaded with B Vitamins.

Healthy Protein Filled Salad! YUMMY TOO!

When I am not in the mood for more eggs, I love a good veggie burger. This salad from my last post is awesome too but I am really liking this one with one of my favorite beans, Cannellini. I also used Wild Planet Tuna which makes for a great combo! You’re going to love this salad!

Do you have these staples in our cupboard? Most of us do but if you don’t, no worries. Leave out the capers, sub in some chopped dill pickles. Use white onion and mayo or olive oil in place of the greek yogurt. I love playing around with recipes and I give you the permission to do the same!

  • Tuna
  • capers
  • white beans
  • lemons
  • avocado
  • red onion
  • greens of course

I love how quickly this salad comes together since I keep my cupboard fully stocked. The combination of avocado, lemon juice, a little greek yogurt bring out the best in the ingredients in this salad. Let’s make a salad?.

WHITE BEAN AND TUNA SALAD

INGREDENTS:

  • 6 ounces of Wild Planet Tuna
  • 1 jar of cannellini beans rinsed and drained
  • 1/2 small red onion, thinly sliced
  • 1 small stalk of celery chopped
  • 3 tablespoons capers, rinsed and drained
  • 1 teaspoon grated lemon juice
  • 3 tablespoons fresh lemon juice
  • 3 tablespoons greek yogurt
  • 1 avocado
  • salt and black pepper
  • greens

DIRECTIONS:

  1. Whisk together lemon zest, juice, yogurt, avocado, 1/2 salt and 1/2 pepper.
  2. In a large bowl combine beans, red onion, celery, capers, and tuna. Stir together gently.
  3. Pour dressing over salad. Fold gently. Season to taste. Serve over fresh greens.
