I can hardly believe it’s almost mid January! It seems like just yesterday we were celebrating New Year’s Eve and I was reviewing my 7 ROARS for 2020. If you’re not sure what I mean by ROAR’S, you can check out this post.

New Years Day we usually sleep in, that is if you can call 6’ish or so sleeping in?. It is for my husband since he gets up at 4 am almost every day of the week. And believe it or not, sometimes on weekends.

I kind of look like this when he crawls out of bed; buried deep beneath the covers?.

Ok, on weekends he may sleep till 5 am, or sometimes 6, but rarely as late as 6:30. God Bless Him. I enjoy my sleep and am OK with a wake-up time between 6 and 6:30. Anyone else with me on this?

Since we most often have different workout schedules, we rarely hit the gym together, but on holidays & Sunday Mornings, it’s a different story. I most often run to the gym and then finish up with strength. Rob is usually done before me since he’s been there a while, but he patiently waits as I finish up the last part of my workout on the Power Plate.

Almost every morning when I am at the gym, I end my workout on the Power Plate. My favorite part are the core exercises and the vibration definitley puts a different twist on them all. I also do standing exercises, lunges, squats, and some stretches. I usually spend 15 to 20 minutes on this machine which is just enough time for Rob to read the paper while he waits?.

Just like any other year, I took most of our Christmas decor down on New Years Day. Believe it or not, I even got some help from my husband?. He agreed with me, the worst part of taking down Christmas is struggling to get everything back in their boxes the correct way.

For dinner he always makes Pork & Sauerkraut. Next time he makes it I’ll ask him if he’d like to share photos and do a guest blog post. Until then you are stuck with my Black Eyed Peas recipe?.

I personally love Black Eyed Peas, more formally known as Hoppin’ John, but not everyone does which is why we also have the traditional Pork and Kraut!

My version of Black Eyed Peas can be made either on the stove top or Instant Pot, or use both like I did this year. I soaked my black eyed peas over night and then used my Instant Pot to cook them. You can also cook them on the stove top if you don’t have an instant pot.

Once the black eyes peas are cooked, I added them to my ingredients which I had sautéing on the stove. I served them with creamy polenta but brown rice or quinoa would also be great choices. Or serve them over fresh greens or in a wrap. Left-overs are amazing!

BLACK EYED PEAS

“Black-eyed peas and garlicky sautéed greens make this a super-charged, protein- and nutrient-packed plant-based powerhouse.”

Ingredients

  • 1 pound dried black-eyed peas
  • 1 onion, halved
  • 3 garlic cloves
  • 4 bay leaves
  • 1 cup chopped onion
  • 3 ribs of celery, diced
  • 1 red & 1 yellow bell pepper, diced
  • 1 jalapeño pepper
  • 1/2 teaspoon chopped fresh thyme
  • 1/4 teaspoon pink Himalayan sea salt
  • 1/2 freshly ground black pepper
  • 1/2 teaspoon red pepper flakes
  • 1 bunch green onions
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon coarse salt
  • 1 teaspoon ground black pepper

DIRECTIONS:

Step 1

  1. Place black-eyed peas, halved onion, garlic, and bay leaves with 5 cups of water in an Instant Pot. Turn on the pot’s pressure cooker setting to manual. Set to 20 minutes.
  2. Drain the peas, discard onion, garlic and bay leave. Reserve about a cup of of the liquid.

Step 2

  1. While peas are cooking in your instant pot, sauté 1 cup chopped onion, celery, bell pepper, and jalapeño in 3 tablespoons of olive oil. Cook, stirring occasionally, until onions are tender and translucent, about 5 minutes. Add the thyme, salt, pepper, red pepper flakes and about 1/3 cup reserved bean liquid to pot; bring to a simmer.
  2. Stir in about 2 cups of black eyed peas and 4 to 6 cups of chopped fresh kale. (reserve remainder of your peas for other recipes)
  3. Adjust the consistency with additional reserved bean liquid if needed. The Hoppin’ John should be moist, but not soupy.
  4. Top with green onions, fresh parsley and additional salt & pepper if desired.
