Spanakopita Turkey Burgers – 2 Ways, Do You Still Use/Purchase Cookbooks?, July 4th Thoughts

When Rob and I were first dating I remember making him these Greek Spanakopita Turkey Burgers from one of my first cookbooks I purchased from our local gift shop, The Village Shop. This was over a decade ago and I still have the book on my shelf….and many more?!

Speaking of cookbooks, I am still adding to my collection! I have shelfs and shelfs of beautiful cookbooks which I still use almost on a daily basis. Most often I will change up the recipe and make it my own, and other times I follow a recipe to the tee, espeically when I am baking. Below is my most recent book I just received.

However, the fun part about my sourdough bread journey, you can play around with different flours, the amount of starter, different mix-ins like olives, dried fruit, nuts or seeds, spices, and I love experimenting with my discard, etc. I have made a few mistakes along the way but I still end up with a pretty damn good loaf of bread. I am still learning, but it sure has been fun.

These burgers are a great example of how you can change them up based on what you are in the mood for. The very first time I made these years ago, I had no idea Rob didn’t like feta cheese because we were new in our relationship. The funny part, he said he loved the burgers so either he was just being polite, or never realized he was eating feta. I am still not sure!

I personally love feta but most of my family does not. So I made one batch with feta and one without. Their loss not mine?!

So for your next burger night, say goodbye to your ordinary turkey burgers and hello to this delicious greek burger. These are super simple to make and I promise your friends and family will be asking you for the recipe. Besides, its this is an excellent July 4th recipe especially since it is definitley grilling weather. So HOT and HUMID this week again! I am kind of glad I am not racing?.

My husband is actually in Texas this week and the actual temp is predicted to be 108 degrees F. OMG. I remember running in Texas this time last year and I thought that was bad enough and it wasn’t quite a 100 degrees when I ran.

To be honest, this week has been challenging. I forget how long it takes my body to adjust to the heat while running….or does it ever?.

Regardless, it’s good weather for grilling…..and personally I believe the feta takes this burger to the next level, but according to my husband, even without the feta, it’s still the best turkey burger he’s ever had.

So this is what you’ll need

  • Ground turkey
  • Feta
  • Garlic
  • Red onion
  • Spinach
  • Oregano
  • Salt
  • Pepper

I prefer to sauté the onion with the garlic, salt, pepper, and fresh spinach and then I let it cool before adding this mixture to my ground turkey. However, you can also mix all the ingredients in a large bowl, from into patties, and grill. Your call. The second option is much easier but I love caramelized onions.

I also made a healthy Tzatziki Sauce. It pairs perfectly with these burgers and it’s super simple to whip up! However, I love my guacamole and trust me, a little guac isn’t a bad idea either?!

HEALTHY SPANAKOPITA TURKEY BURGERS ~ 2 Ways

INGREDIENTS:

  • 2 tablespoon extra-virgin olive oil, reserve 1/2 tablespoon for drizzle
  • 1 small red onion, 1/2 chopped (and 1/2 thinly sliced optional)
  • 2 medium garlic cloves, minced
  • 1 small container of fresh spinach, chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 pound ground ground turkey breast
  • 1/2 cup crumbled feta cheese (or cheese of choice)

DIRECTIONS:

  1. Heat a large nonstick skillet over medium-low heat. Add the Olive Oil and add chopped red onion, chopped garlic, oregano, and basil and cook for 5 minutes.
  2. Add the fresh spinach and continue to cook till wilted. Let cool. Add the ground turkey and feta, and a healthy drizzle of olive oil.
  3. Mix it all together, then divide the mixture with the side of your hand into 4 equal sections. Form 4 patties, each 1 inch thick. In the same skillet, cook the patties over medium-high heat for 5 minutes on each side. OR GRILL!
  4. Slather the rolls if using with your the yogurt sauce if making. Place the cooked burgers on the sauce and top with the your choice of toppings. Fresh tomato, sliced red onion, and cucumber are yummy?.

Are you a feta fan? I prefer feta made with Sheep’s milk verses cow’s milk.

I prefer goat or sheep milk cheeses but I am mostly dairy free. I also love Pecorino on Pasta. YUM
