Also, I included some frozen cauliflower rice because as you know, I love adding veggies to my smoothies. Next I used a little coconut milk, coconut water because I love the flavor, and some chia seeds to make a thick and creamy smoothie, which is how I love them. It was, as usual, a great Global Conference even though it was virtual. I did miss spending time with Shaklee family, and running with them too! A highlight of every convention is our Shaklee Cares 5K. It certainly wasn’t the same this year.
However, the best part about virtual races is you can pick your day to run, which is exactly what I did. I woke up Sunday morning, the day after my shirt arrived, and said to my husband, “It’s a beautiful morning for my Shaklee Cares 5K!”
It wasn’t a race for me, more like a workout. I gradually increased my pace after a slow warm-up and then ran some faster miles before cooling down. I averaged about an 8:30 pace for the 5K portion, which actually felt really good, but still challenging.
Running on a beautiful morning with amazing colors, very little wind, and for a good cause, is a perfect way start to any day. Finishing up with a refreshing Elderberry Smoothie Bowl was the icing on the cake?.
IMMUNE BOOSTING ELDERBERRY SMOOTHIE
INGREDIENTS:
- 1/2 cup blackberries, fresh or frozen
- 1/2 frozen cauliflower rice
- 1/3 medium frozen green tipped banana (optional)
- 1/3 cup coconut milk
- 1/3 cup unsweetened coconut water
- Handful of ice
- 2 scoops Elderberry Life Shake
DIRECTIONS:
- Place all ingredients into a blender.
- Puree until smooth; always start on low and increase speed gradually. Add a little more water if needed.
- Top as desired.
- Serve immediately.
