Sautéed Cinnamon Apples Brown Buttered Oats with Cinnamon Nice Cream, A Few of My Favorite Things, and One Not so Fave

This sautéed apple cinnamon oatmeal is incredible. It’s easy to make, high in protein and fibre, naturally gluten-free, healthy, filling and so, so good. Bonus, no added sugar.

This post is all about a few of my favorite thanks and one not so fave. Lets start with the good stuff first!

Sautéed Apples in Brown Butter…Game Changer!

First up, another yummy oatmeal bowl! These might be my favourite bowl of oats ever, if not, second only to my  Sprouted Blueberry Oats. The oats are thick and creamy, the apple is soft and cinnamony, and together they make one amazing, special breakfast you can enjoy anytime you feel like something to nourish and warm up both your body and soul. These ones will put a smile on your face for sure! They just feel good…yes they do!

Now lets talk about Nice Cream! These oats are even better topped off with Cinnamon Nice Cream, just sayin?! I can’t think of a better combination can you? Oats topped off with warm cinnamon apples sautéed in brown butter and cinnamon nice cream. A game changer my friends! If you’re a strict vegan, use coconut oil or vegan butter.

These are also free of any added sugar!

Trust me, these were perfect after my chilly Long Run Friday. In less than 15 minutes I was able to sit down to these comforting oats with a cup of coffee, a cozy warm sweater, and wooly socks. With my fireplace on of course. Sounds so inviting, doesn’t it?

But of course, these are suitable to enjoy anytime?. The best part, they’re vegan, naturally gluten-free, high in protein and fibre with lots of vitamins and minerals and have no sugar added. Feel free to add some maple syrup or coconut sugar to your apples if you prefer.

Last but not least, I’d like to talk about my running. I am currently still maintaining fitness, running easy most mornings, and occasionally throwing in some pace work. All is good and I feel incredibly blessed to run. Yes, I too miss the race environment, but to be perfectly honest, it’s never been about racing for me. What I miss most is probably the traveling that accompanies my marathon. It’s truly a great way to see the world!

In fact the older I get the more I look forward to escaping our long Minnesota winters for warmer running weather. Which leads me to probably my least favorite thing right now. Running in snow, wind, and and occasional frozen snow, which some may refer to as “grappel”, is definitely making me just a little crabby?. Winter started early here in MN and I for one am hoping for another warm up. If not, it’s going to a long 6 months.

Until than, lets say hello to your new favorite fall breakfast, brunch, post run treat, or midnight snack?. Actually, it’s so good you’ll want to enjoy this nourishing bowl of oatmeal year round. These extra cozy oats are made with flax meal, cinnamon, and a splash of vanilla and for extra nutrition topped off with Cinnamon Nice Cream made with my favorite protein powder. The cinnamon sautéed apples in browned butter are the perfect way to top it all off!

SAUTÉED CINNAMON APPLES OATMEAL WITH CINNAMON NICE CREAM

INGREDIENTS:

For the Oatmeal

  • 1/2 cup rolled oats (50 g)
  • 1 tbsp flax seeds
  • 1 cup unsweetened almond milk
  • Pinch of Pink Himalayan sea salt 
  • 1 teaspoon cinnamon (optional)

For the Brown Buttered Sautéed Cinnamon Apples

  • 1 to 2 teaspoon butter, (can just use water if you like)
  • 1 apple of choice, chopped
  • 1 tsp cinnamon 
  • water for sautéing

For the Nice Cream

  • 1 frozen green tipped banana
  • 1 to 2 scoops French Vanilla Protein
  • 1 teaspoon cinnamon
  • 1 date
  • Small amount of almond milk to blend

DIRECTIONS:

  1. To make the oatmeal, add all the oatmeal ingredients to a small pot and cook over medium heat, stirring frequently for 7-10 minutes until thick.
  2. To make the brown buttered cinnamon sautéed apples, heat the butter in a medium cast iron skillet. Let it brown up, then add the chopped apples, and cinnamon. After about a minute, add a couple tablespoons of water and continue cooking and stirring. As the water evaporates and the pan dries out, keep adding a little more water and continue to cook until the apples are soft, browned, ooey, gooey and delicious.
  3. As the apples are cooking, make your Nice Cream. Slowly blend all ingredients in a high powered blender. Be careful not to add too much liquid.
  4. Scoop the cooked oats into a bowl, top with the sautéed apples, nice cream and enjoy.
