Happy New Year Friends! Who else is ready to move into 2021 with more courage & hope? Truthfully, 2020 was a lot of fun, but not the funnest year I have ever had.
However, I am forever grateful for the lessons I learned, realizing the value of the little things in life, and of course remembering there is always room to grow.
I listed my Top 9 moments here and as you can see, my list grew to more like 12. It just goes to show, 2020 wasn’t all that bad. 2020 gave me time to figure out what was most important in life and to cherish these things with all my heart.
One of the last things I mentioned was my total miles for 2020. I honestly had not decided when 2020 started to run the year…and than some. It kind of just happened. And the end of the month Strava sends an email with my total monthly miles. I rarely pay that much attention to the number, except in October for RUNDEST0BER.
But to my surprise, even though I had no destination marathon to train for, I had a record breaking year. For some runners, this number is peanuts, but for an average master runner like me, it was a lot of miles! Seeing this number actually inspired me to create my word for 2021. To be perfectly honest, I rarely pick a word because I can never decide on one?. So here I am debating between two words again, Courage and Hope.
I am hopeful 2021 will different than 2020. I mean that’s a no brainer right. I miss family members I haven’t seen in over a year. I also miss traveling, espeically for a destination marathon. And since my husband and I are both foodies, we miss checking out new and visiting old restaurants.
But I keep going back to COURAGE! So this year I am going to be more courageous and do more things that may be scary for me. I am not sure what all of those things are right now, but I have a feeling as the year goes on, I’ll figure them out.
The year I left my corporate job in Chemistry to focus on my Shaklee business was probably the most courageous thing I have ever done. That was over 25 years ago. Since than I have had the courage to do a lot of things that make me uncomfortable to grow my business. So this year I want to build on that and do MOAR.
Do you have a guiding word? Courage to get out of my comfort zone more often. Courage to talk to more people. Courage to run a tad more miles than I ever thought possible for fear of getting injured or burnt out. Courage to share more non edited food photos. Courage to try more new things.
Speaking of, check out my New Years Eve & New Year’s Day Eats. It was dark and I didn’t have natural lighting so my photos are not perfect, but I couldn’t resist sharing. I loved everything about this cauliflower mash from Pinch of Yum!
I did modify the mash slightly by using freshly grated parmesan cheese vs cheddar and non-dairy milk. I also served it with spicy salmon verses shrimp.
As much as I love my original Cauliflower mash, I love adding white beans. It gave it more substance and increased the protein so you realistically could omit the salmon or shrimp.
On New Year’s Day, we had black eyed peas. It has become another tradition. Did you know that black eyed peas bring good luck? We can all use some more GOOD LUCK in 2021?.

CAULIFLOWER MASH WITH WHITE BEANS
INGREDIENTS:
- 2 tablespoons olive oil
- 1 head cauliflower, cut into small florets (about 6 cups)
- 3 cloves garlic, minced
- 1 cup milk, can be non-dairy
- 3 cups vegetable or chicken broth
- 1 14-ounce can white beans, rinsed and drained
- 1/2 cup cornmeal
- 1/2 cup shredded cheese, sharp cheddar, havarti, parm, or non-dairy
DIRECTIONS:
- Heat the olive oil in a large soup pot.
- Add the cauliflower and garlic. Sauté for a minute or two, until the garlic is fragrant. Add the milk and 2 cups broth. Simmer for 10 minutes or until soft.
- Add the white beans and mash roughly with the back of a large wooden spoon. It will be soupy – that’s okay.
- Stir in the cornmeal and things will start to thicken a bit. Adjust the consistency by adding in the last cup of broth as needed. Stir in the cheese and season to taste.
