Did you have a favorite pie or other dessert growing up? Although this smoothie may not even come close to my mom’s lemon meringue pie, it’s definitley bursting with energizing lemony flavor, and a seemingly decadent creation that your taste buds will go crazy for.
Since my mom was the head baker at a local family restaurant in town AND she managed another smaller cafe a couple days a week, we were lucky to have our share of delicious homemade treats. She became quite famous not only for her delicious pies, but also for her gooey sticky buns.
She is fully retired now but trust me, she still is stirring up plenty of cookies, cakes, muffins, scones, and occasionally a cheesecake or pie. She loves spending time in her kitchen and although she is not making pie on a weekly or even monthly basis anymore, she still enjoys making them for special occasions.
The funny thing is, I have three brothers and we all had our favorite pie so there have been times we had three a variety of pies🤷🏼♀️. My older brother loves pecan. My two younger brothers like banana cream and blueberry. Mine was and still is apple. So why a lemon meringue pie smoothie? Cuz it was my dad’s fave. Actually it was one of the TOP selling pies at both the restaurant and cafe she managed. He meringues were out of this world gorgeous. Almost too pretty to eat. All her pies had incredibly flaky curst, but her lemon meringue had a luscious lemon layer underneath this mile high meringue. No wonder it was so popular. It looked like a master piece.
These days, I still like to enjoy treat from time to time, especially on special occasions. This year for Mother’s Day I won’t be making any lemon meringue pie mostly because I suck at making pies, but I will be making this luscious lemony smoothie into individual parfaits.
The fresh taste of lemon is so light and energizing, and it just so happens that citrus fruits are in season during the spring, so now is a perfect time to take advantage of them all. So If you like to have your pie every day AND eat it too, then this smoothie is exactly what you need. It’s bursting with energizing lemony flavor, it’s a seemingly decadent creation that all your guests will absolutely love, espeically your mom.
On a final note, if you happen to be one of those that find Mother’s Day a very difficult day for whatever reason, I am sorry. One of these days I know that I will no longer have my mom with me but for now, I know I am blessed to be able to have her close by.

LEMON MERGINGUE PIE SMOOTHIE
Ingredients:
- 1 T. Coconut butter
- 1/4 C. full fat coconut milk
- 1/4 C. Lemon juice
- Zest of one lemon (organic) or 2-3 slices of a lemon
- 1/3 frozen banana
- 1 C frozen riced cauliflower
- few drops of almond extract (optional)
- 1 serving French Vanilla Protein Powder
- ice
- optional toppings
Directions:
- Put all ingredients in high speed blender. Blend until smooth.
- Pour into your favorite bowl and don’t forget your optional toppings…Granola, fresh berries, and a swirl of nut butter
