Double Chocolate Smoothie Bowl, Summer is Here & Trail Running

Even though this may look like dessert, this double-chocolate smoothie bowl is actually good for you. In fact, it has no added sugar and is mostly vegetables, healthy fats, and very low in carbs.

When I made this for my husband, he actually thought he was eating homemade chocolate nice cream which is made with frozen bananas and occasionally other frozen fruit. When I told him it was mostly veggies, he was totally shocked.

You can definitley make this with frozen bananas, but if you’re needing a low carb option, try using cauliflower rice in place of the bananas and a few frozen avocado chunks. Your smoothie will be just as creamy and delicious but much lower in carbs with more healthy fibre & fats.

With our without a dollop of Coconut Yogurt

As mentioned in this post, since the the flavor of cauliflower is so subtle, it easily gets masked by the addition of the other ingredients and is perfectly creamy and flavorful without adding fruit.  So if you are watching your sugar, or practice carb cycling like me, cauliflower is an excellent choice.

Because all berries are low in carbs, & have a low glycemic index, they are a perfect topping for this bowl. I mean, who doesn’t like chocolate covered strawberries and every bite of this reminds me of just that!

You can enjoy this for breakfast, lunch, or as a snack, or even dessert. I used unsweetened raw cocoa powder and this Rich Chocolate Plant Protein powder for an extra chocolatey treat. May I also suggest a heaping tablespoon of your favorite chocolate nut butter 😋 ? Seriously so yummy! And ya all know I love a little crunch on my smoothies. Be sure to use low sugar grain free granola to keep this low carb friendly.

Celebrating National Trails Day on my Favorite Trail!

This looks, tastes, and is just as refreshing as a big chocolate sundae, but so much better for you. Trust me, this is the perfect post run treat on a hot humid summer morning. Even at 7 am the temps are in the high 70’s and when combined with humidity, it makes for tough running conditions.

I am very thankful to have the Luce Line Trail less than a mile from my house. It’s where most of my running miles happen. During the summer months, I am especially thankful for the trees giving me some much needed shade!

Even though it’s been a hot start to the summer, it’s still my favorite season for running, even though most often I look a little bit beat up. Guess what’s on my mind here….this Double Chocolate Smoothie bowl 😉 .

DOUBLE CHOCOLATE SMOOTHIE BOWL

INGREDIENTS:

  • 1 cup frozen cauliflower rice
  • 2 to 3 small frozen avocado chunks
  • 1/2 cup Unsweetened Almond Vanilla Almond Milk (or full fat coconut milk)
  • 2 tablespoons raw cacao powder
  • 1 tablespoon chia seeds
  • 1 teaspoon ground cinnamon optional
  • 1/4 cup coconut yogurt (I used this one)
  • 1 to 2 tablespoons chocolate almond butter
  • 1 date pitted
  • Organic Green Booster or fresh greens or both (I use these)
  • 1 to 2 scoops Rich Chocolate Protein Powder

Optional toppings:

grain free granola, chocolate chips, coconut yogurt, fresh fruits, hemp seeds or chia seeds

DIRECTIONS:

  1. Place all ingredients in a high speed blender. Start slowly and use your tamper tool to force the mixture into a purée. Add a little more milk if needed.
  2. Top as desired.
