I am going to start off by saying, this the BEST summer time dessert! Sourdough peach cobbler is a delicious summertime dessert because it’s made with fresh, farm-picked Colorado peaches, and topped with lightly-sweetened sourdough biscuits.
You guys all know how much I love having fun with my sourdough starter. Most weekends I am baking up a loaf of sourdough bread, sometimes two. One for us and one to give away or take to a family gathering. This past weekend we took a road trip to my brother’s house in SD. Not only did I bring a couple of my favorite breads, I also whipped up this delicious cobbler.
I love using my starter to ferment grains, not only in breads, but also baked goods. The end results is amazing. Plus, sourdough provides the added health benefit of reducing phytic acid in grains. It is also why I soak all my nuts or purchase sprouted nuts.
If you saw my post, you all ready know I got a boat load of fresh Organic Colorado peaches. They are the juiciest peaches ever! I think I have had a peach smoothie almost ever day since. Last Friday after my long run, I made my basic creamy oats but used peaches verses blueberries and topped my bowl off with peach nice cream. DELiCIOUS!
These Colorado peaches inspired me to make this cobbler. I have soooo many peaches so why not make a deliciously healthy summer time dessert for my family? It turned out so well, everyone absolutely devoured it. My niece says it’s just as delicious the next morning with a hot cup of coffee.
You can serve it a la mode, or eat it by itself; either way, it’s so yummy😋.
Why you’re going to LOVE this Peach Cobbler
Summer heaven. Peaches are at their peak right now, and this is such a fantastic way to enjoy them. Peaches and blueberries are also a perfect match and you’ll love the cinnamony flavor!
Texture, texture texture. This peach cobbler has the best of texture worlds. The buttery biscuits melt in your mouth while the juicy sweet peaches will make your taste buds soar.
Decadent but healthy. This is the most decadent dessert you can imagine (hello buttery biscuits)! But it’s also healthy because I used freshly milled whole wheat flour and my starter to make my biscuits.
Easy to make. While this recipe might sound complicated or challenging, it’s actually very easy and quick to prepare. If you don’t have a sourdough starter, feel free to use your favorite buttermilk biscuit recipe. Biscuits are way easier to make than a flaky pie crust. Everything else is made in my cast iron skillet.
How to Make this Peach Cobbler
If you’re making sourdough biscuits, start by soaking the grains the night before: in a bowl, combine 2 cups of fresh flour, then add 1/2 cup sourdough starter, 1/3 cup melted coconut oil or ghee, and 1/4 cup honey, and mix well.
Next slice and peel your peaches (however next time I make this I will opt not to peel). Add them to your cast iron skillet along with some organic wild blueberries. Sprinkle with the remaining ingredients ~ cinnamon, flour, butter, coconut sugar. Bake just 10 minutes
Add the remaining ingredients to your biscuit dough. Knead, roll out your dough, cut into biscuits, place on top of peaches in skillet. Bake another 20 minutes or so.
It was the perfect ending to a delicious family gathering. And in my opinion, a delicious way to enjoy the Olympics. My brother has the USA live channel so a few of use gathered around the big screen tv to watch the men’s marathon. Even my 7 year old nephew enjoyed watching the runners❤️.
Speaking of the Olympics…here are a few of my most memorable moments:
*My favorite event of the Olympics has always been both the women’s and men’s marathon. This year’s didn’t disappoint. Watching Molly Seidel fight for the bronze was so incredible. I almost cried watching her cross the finish line and then I did cry as she was doing an interview afterward. Who am I kidding…I cried again when I read this. Tears of joy! She definitely left it ALL out there on the course. If you are not familiar with her story, it’s incredibly inspiring. Instead of running in the 2016 Olympics, she went to an eating disorder recovery treatment center. Now she’s a medalist. She is also very open about her struggles which makes her even more likable. Following her on Strava has been a hoot too….I love sense of humor and how she doesn’t take herself too seriously. Her insta stories crack me up….I can’t wait to see what is next for her!
*During the men’s marathon I first off would have loved to have a microphone on Eliud Kipchoge. I kept wondering what the heck he was saying? More importantly, how does anyone hold a conversation running sub 5 minute miles?
And, he also never stops smiling😀.
*“What a good friend” says my 7 year old nephew! No kidding! The friendship between these two men was incredible. Nageeye kept looking back and waving his hand to encourage Abdi to come run with him for the bronze medal. I still am not sure if they knew each other before the race since they are from different countries? But in any case, it sure looked like they had a very special long time friendship. Although it’s what runners do….they cheer each other on! I did feel so sad for Cherono in that moment though! He was in 2nd for a long time and at the very end these two worked together and earned silver and bronze. It was such an amazing finish but heartbreaking for Cherono too.
I unfortunately didn’t get to see much of the Olympics during the week, but did catch some good clips and tuned in on both weekends. All the athletes are so inspiring!
Now are you ready to bake the best summer time dessert EVER?
SOURDOUGH PEACH COBBLER
INGREDIENTS:
- 2 cups whole wheat flour – or you can use all purpose
- 1/2 cup sourdough starter
- 1/3 cup melted ghee
- 1/4 cup of raw honey
- 1 tsp baking soda
- 1 tsp baking powder
- 1/4 tsp cinnamon
- 1/2 tsp salt
- 1/2 cup coconut cream – or use heavy whipping cream
- 1/4 cup coconut sugar
- 10 peeled and chopped peaches – next time I won’t bother peeling
- 2 tsp cinnamon
- 2 Tbsp flour
- 3 Tbsp butter
- 1/3 cup coconut sugar or honey or maple syrup
DIRECTIONS:
- Start by soaking the grains the night before: place 2 cups of fresh flour in a bowl, then add sourdough starter, melted coconut oil, and honey, and mix well.
- Let sit covered for 8-24 hours.
- After the dough has fermented, preheat oven to 350.
- Add 1 tsp baking soda, 1 tsp baking powder, 1/4 tsp cinnamon, 1/2 tsp salt, and 1/2 cup cream to the sourdough mixture and combine well.
- Add 1/4 cup organic brown sugar and mix.
- Peel and chop 10 peaches and add to a large cast iron skillet.
- Sprinkle 2 tsp cinnamon over peaches, and add 3 Tbsp butter, 2 Tbsp flour, and 1/3 cup brown sugar (honey or maple syrup will also work).
- Place in a 350-degree oven and bake for about 10 minutes, until the butter is melted, while you work on the biscuits.
- Turn biscuit dough out on a lightly-floured surface and roll it out or pat it out to about a half-inch thickness.
- Cut out about a dozen biscuits using biscuit cutter or wide mouth mason jar.
- Pull the peaches out of the oven and give them a good stir to incorporate the butter and melted sugar, and place biscuits on top of the peaches.
- Bake for 20 minutes, or until the biscuits start to turn golden in color.
- Allow to rest for awhile before serving.
