By accident I made the BEST grilled cheese of my life. If you have healthy ingredients on hand, you can make really good for you tasting food!
Have you tried Kimchi? In my last Azure Standard order I ordered a new Kimchi and let me tell you, it is so flavorful! If you haven’t tried it, I highly recommend you head to your local natural food section or join a buying club and grab a jar. Little did I know, it takes a basic grilled cheese sandwich up a notch.
Both my husband and I love a sauerkraut on just about anything, but espeically a grilled cheese. On a whim I decided to replace it with Kimchi. Best decision of the day. Also, in case you didn’t know, the benefits of eating cultured food, especially Kimchi, are endless.
- Aids in digestion because it’s high in fiber
- Block free radicals since it’s high in anti-oxidants
- Anti-aging properties
- Reduces inflammation
- Rich in probiotics
- Helps gut health
- Controls cholesterol
- Boosts immunity
- Rich in flavonoids which help reduce cancers
- Helps with diabetes since it helps lower fasting glucose
This past week has been a bit challenging since I definitley caught a horrible bug. I was doing my best to stay hydrated and to also eat more anti-inflammatory foods. It wasn’t easy since I didn’t have an appetite. It was mid afternoon and to be honest, nothing sounded good, but I knew I needed to eat something. I decided to try a grilled cheese…nut not just any grilled cheese of course 😉
Best decision of the day. It was just what I needed and thankfully it tasted good. It’s been a rough week, but the good news, I tested negative for COVID three times. You could say I was quite relieved and so was my mom! It was just a badass cold with one horrible cough. I am not sure which is worse ~ Not being able to run because
- you’re sick
- or injured
Either way, I miss running. But I do love this Grilled “Not” Cheese with Kimchi!

GRILLED “NOT” CHEESE WITH KIMCHI
INGREDIENTS:
- 2 slices Sourdough
- Avocado
- Trader Joes Everything Bagel Seasoning (optional)
- Non-Dairy Cheese
- Kimchi
- Butter
DIRECTIONS:
- Butter Sourdough bread.
- Lay slices of avocado on unbuttered side of bread.
- Sprinkle on seasoning.
- Add cheese of choice.
- Spoon on generous amount of Kimchi
- Grill
- Enoy
