Fall is definitley the prettiest season for running here in Minnesota, and if I am being honest, the most comfortable weather wise. I still prefer running in the heat of summer, but it’s hard not to love the colors of fall.

I love everything about fall ~ cozy cardigans, boots, football, apple picking, corn mazes, colorful leaves, and obviously anything and everything pumpkin! That includes pumpkin foods.

It’s hard to believe that I haven’t shared my favorite Baked Pumpkin Spice Oats with you yet. As much as I love my Creamy Turmeric Pumpkin Oats, I am in love with this baked version. This is one of my favorite dishes to whip up after a long run Friday in the autumn months because it’s so easy to make. It only takes about about 5-10 minutes to prep!

Throw everything in a blender except the chocolate chips

Yes the transition from summer running to fall is definitely a perk for living in Minnesota and so is the transition to fall produce. These baked pumpkin oats are so good I had them again the following week.

My husband said they are tasty enough to pass as a dessert. Truth, but I love them because they are healthy and energizing which makes them the perfect recovery meal.

After a week off of running, strength training, and even yoga, I was happy to be back out for my long run Friday. It was definitley much slower than last week and it felt felt harder, which is understandable since I am still recovering from my cold. Another reason these baked oats hit the spot.

What you need for these dreamy Baked Pumpkin Oats

For this recipe I used sprouted oats (perfect for sneaking extra fiber and protein into your meal), pumpkin pie spice (obvious I know) cinnamon & Turmeric (for it’s anti-inflammatory properties) pumpkin purée, and protein powder for a boost of plant protein. These, along with a few other ingredients, create the best baked oatmeal on the planet. And that’s a fact.

  • Sprouted Oats
  • Baking powder
  • Pumpkin pie spice
  • Cinnamon
  • Salt
  • Almond milk (or non-dairy milk of choice)
  • Vanilla protein powder
  • Pumpkin puree
  • Vanilla
  • Chocolate Chips or Hu Gems

How to make Baked oatmeal with pumpkin

Simple! Throw all your ingredients in your high speed blender. Blend till smooth. Pour into a greased ramekin. Top with chocolate chips. Bade 25 minutes. Enjoy.

Baked Pumpkin Spice Oats

INGREDIENTS:

  • 1/2cup sprouted oats @onedegreeorganics
  • 1 serving vanilla protein powder @shakleehq
  • 1/2 teaspoon pumpkin pie spice
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon turmeric & dash black pepper
  • pinch sea salt
  • 1/3 cup pumpkin purée
  • 3/4 cup unsweetened non dairy milk

TOPPINGS:

  • Handful @hukitchen chocolate gems
  • Sprinkle pumpkin pie spice
  • More milk

DIRECTIONS:

  1. Preheat oven to 350F
  2. Blend oats, protein, pumpkin purée, baking powder, spices, and milk of choice. Pour into ramekin.
  3. Top with @hukitchen chocolate gems or your favorite chocolate chips and bake 20 minutes.
  4. Once baked, sprinkle with some more pumpkin pie spice and pour cold milk over top. Let absorb slightly.
