Thanksgiving is definitley my favorite holiday! Unlike last year when we were in the midst of a covid shut down and having smaller gatherings, this year seemed much more normal for most.
Rob and I were blessed to celebrate Thanksgiving a bit early in Texas with our kiddos. We had an early morning flight on the Saturday before Thanksgiving which put us in Dallas by 10:00 am. Once we arrived, we didn’t waste anytime preparing our early Thanksgiving Day feast.
Our menu was very traditional
- oven roasted turkey
- perfect roasted Brussels
- sweet potato casserole
- homemade stuffing
- homemade gravy too
- sourdough bread from this bakery
- pumpkin Pie
My favorite part of the day was seeing my grandkids enthusiasm of wanting to help grandpa and grandma in the kitchen. Plus Adelyn discovered she loves Brussels….I lost count on how many she ate raw, yes raw, as she was helping Grandpa prep them for roasting. Seriously, how many 9 year olds eat raw Brussel sprouts 🤷🏼♀️?
I love how versatile this veggie is. Last year I prepared them on a sheet pan with lots of garlic and butternut squash. For my Friends Thanksgiving, I made a Hashed Brussels Dish which was delicious but did involve shredding all the Brussels. This is a breeze with a food processor, but definitley a pain without one. And these roasted Brussels are incredible too! Lets face it, Brussels are incredible no matter how you fix them! Agree?
But you definitley can’t go wrong with simple roasted Brussels. Plus when you are cooking for kids, simple is most often the safest way to go in hopes they’ll eat them😉. I must have did something right since the girls loved them, along with everyone else but Colton. He’s our picky eater, but we’re all hoping it’s temporary 🙏🏻.
After cutting the Brussels in half, we drizzled them with Olive oil, added salt and pepper, and roasted them in a hot oven for about 40 minutes stirring twice. Our meal was incredible! I was too busy cooking so not many photos of our food besides the yummy Brussels. Guess you know what was my favorite dish 😉!
The next morning I went out for a quick run before meeting up with the kiddos at 7 Mile Cafe for an amazing brunch. If you ever visit Denton, check this place out! Their oat bowl is delicious. To be perfectly honest, everything was! I think the kids must have gone through 2 orders of bacon each 😂.
I was really hoping to run a race again this year but unfortunately our travel plans changed last minute so things didn’t line up. We did have perfect running weather though!
Monday Rob and I took the kids roller blading. I was smart and decided to supervise. My back is finally feeling almost 100% so there was no way I was going to risk hurting myself. The kids did great though! Rob took one tumble and decided to join me in spectating. HaHa.
They definitley worked up an appetite and they couldn’t wait to make help me make guacamole! It’s the first thing they ask me when I arrive….“Grandma Karen can we make guacamole again?”
As much fun as rollerblading was for the kids, they had just as much fun the next day! It was a great day to be outside so we strolled over to a near by park. Nora was quick to make friends like she does everywhere she goes. The kids loved taking turns flying the Dragon kite.
We played board games every night after dinner! I’ll probably miss this the most.
And taking selfies with Nora….she loves them!
Saying goodbye is never easy, but both Rob and I were excited to get home to celebrate Thanksgiving all over again with both of our mom’s and siblings. I hope you all had a Blessed Thanksgiving❤️.
