This Apple Maple Butter Oatmeal from RISE & RUN is perfect for Christmas morning or anytime you need a warm, cozy breakfast!
I never get tired of my creamy oatmeal combinations but I promise if you are looking for something that is healthy, and can be prepped in advance, this oatmeal bake is for you! Personally, Christmas Brunch is way more exciting than Christmas dinner 🎄😉🤷🏼♀️❤️.
Christmas morning growing up as a kid was all about playing with all our new toys after church and having my mom’s homemade cinnamon rolls. They are soooo GOOD! My moms rolls are famous here in Hutchinso and to this day, she continues to bake them for not only us, but occasionally others who request them.
This year since I have not mastered her recipe (yet) I made one of my other favorites I remember having occasionally…baked oatmeal. I love my creamy oats but what I love about this recipe is that it can be prepped in advance which makes it PERFECT for Christmas morning brunch.
This actually reminds me of my mom’s apple cake because it’s packed with the same wholesome ingredients that I love after a chilly Christmas morning run. I love serving this with blueberry nice-cream for extra protein but dairy free yogurt would be delicious too.
My husband likes his with lots of maple syrup……He has the sweet tooth in the family.
We are opposites in many ways but when it comes to giving gifts, we think so much a like. My favorite gift this year, and I believe his too, was our matching mugs.
APPLE MAPLE BUTTER OATMEAL BAKE

INGREDIENTS:
- 2 cups sprouted old fashioned oats
- 1/4 cup ground flax
- 1 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground cardamom
- 1/4 teaspoon pink salt
- 1 teaspoon baking powder
- 4 tablespoons melted butter (plus more for dish)
- 2 eggs
- 1 1/2 cups milk of choice
- 1/4 cup pure maple syrup
- 2 cups chopped apple
- 1/3 cup chopped nuts/raisins
- Nice cream or yogurt (optional toppings)
DIRECTIONS:
- Preheat oven to 400 degrees. Butter an 8″ square pan.
- In a large bowl, combine the oats, flax, cinnamon, cardamom salt and baking powder.
- Melt butter.
- Make a well in the center of the dry ingredients and crack the eggs into the well. Whisk the eggs, add the milk maple syrup, and melted butter. Whisk thoroughly, then stir to combine remaining dry ingredients. Stir in the apples ad nuts.
- Pour oatmeal into prepared dish and dot with 2 tablespoons butter.
- Bake for 40 minutes or until crispy on top.
- Cut into squares and serve with optional toppings ~ nice cream, yogurt, maple syrup
