Did you know adding protein to your baked goods and delicious deserts can help minimize blood sugar spikes?
It’s an easy way to make your baked goods healthier! What happens is by adding protein powder to your muffins or other baked goods, you’ll be able to minimize that blood sugar spike.
You’ll also notice better focus, more stable energy levels, which in turn will help maintain your weight because you’ll have less cravings!
These super hero muffins are one of my favorite post runs snacks. I will pull one of these out after my long run and leg day and nibble on it while I make a more substaintial smoothie or oat bowl or both😍!
They’re so perfect for chocoholics (or any one who works out 💪😂) and luckily dark chocolate is good for us! Dark chocolate is high in essential minerals like magnesium which helps with cramping and antioxidants which minimize inflammation.
The best part about these muffins, they taste incredibly decadent just like a brownie, but are gluten free and sweetened with just a little raw honey and bananas.
Since I use green tip bananas, they are are even better for you.
I love eating baked goods after a workout because that is when your muscles are like a sponge and absorb every single nutrient you pour it your body. Go ahead and enjoy one of these muffins!

Dark Chocolate Super Hero Protein Muffins
(adapted from Rise & Run Cookbook)
Ingredients:
- 2 cups oat flour
- 1 1/2 cups hazelnut flour or almond meal
- 3/4 cup dark chocolate chunks @hukitchen
- 1/2 cup chopped sprouted hazelnuts
- 1/3 cup unsweetened raw cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon done sea salt
- 2 scoops Collagen9
- 3 eggs
- 1 cup mashed green tipped banana
- 1/3 cup Greek Yogurt grass fed or use dairy free
- 1/2 cup local honey
- 4 tablespoons melted ghee
- 1 teaspoon vanilla
Directions:
- Preheat oven 350F
- Live 12–cup muffin tin with parchment liners
- In large bowl, mix dry ingredients
- In separate bowl whisk the eggs, bananas, yogurt, honey, melted ghee, and vanilla.
- Add wet to dry ingredients.
- Spoon batter into muffin cups
- Bake 25 minutes
- Store in refrigerator or freezer and reheat in oven for about 8 minutes
