If you read my last post, you all ready know I ran another marathon. In case you missed it, you can catch up here.
The Miami Marathon course definitely ranks as one of the most beautiful courses I have had the opportunity to run, BUT if you run it, be prepared for the weather! My favorite part as I mentioned in this post was seeing the sun rise as we ran over the bridge. The least favorite part…the heat and humidity. But I did it!
Ironically, 85 degrees and sunny every day for 15 days is hard to beat after enduring one of the most difficult winters we’ve had in a long time. So Much Ice!
So I have to admit, as glad as I am to be home, I miss Florida.
We spent one more day in Miami after the marathon before moving on to the Naples area, Estero Florida. My friend who I have known for 20 plus years lives here and we spent the few days in her lovely home.
Rob was able to comfortably set up shop in her spare office which used to be her husband’s before he passed away about a year ago.
While my husband worked during the day, Susan and I kept busy shopping, going for walks, and also working our Shaklee businesses.
My favorite memory was cooking for Susan’s family. The guys grilled while I prepared all the side dishes including my famous guacamole. OMG…the over whelming response to my guac was absolutely incredible. It was definitely the largest batch I have ever made and there was not much left 😂
They could not stop raving about it.
Next was the slow roasted sweet potatoes. They all loved the crispiness of the skins and the pillowiness of the insides. We topped off our potatoes with this vegan creamy spinach and chickpea sauce which was also a big hit.
We were all STUFFED.
It was a remarkable 4 days catching up and making more lasting memories!
