Don’t think eating meatless Monday meals means the end of enjoying delicious meaty snacks, sandwiches, or salads!
Quite the opposite! There are tons of amazing meat alternatives on the market you can whip up on the fly, but this quick and versatile crispy tofu will satisfy even the non-tofu enthusiasts😄.
It’s smoky, slightly sweet, and makes the perfect snack that will remind you of eating your favorite jerky ~ but it’s meatless.
It can also be layered in a sandwich 🥪 or thrown on a salad 🥗 which is incredibly delicious and satisfying.
Plus according to Mayo Clinic ~ “It was once thought that soy foods increase the risk of breast cancer. However, eating a moderate amount of soy foods does not increase risk of breast cancer — or other types of cancer. A moderate amount is one to two servings a day of whole-soy foods, such as tofu, soy milk and edamame”
When you slice tofu and thin as possible, coat it with a savory & slightly sweet marinade, and bake it till it’s crispy, it makes a delicious alternative to sandwich meat. I used a sprouted bagel, avocado, veggies and my crispy tofu.

CRISPY THIN TOFU SLICES
INGREDIENTS:
- 1 block extra firm tofu, pressed
- 1/3 c coconut aminos
- 1/4 c avocado oil
- 1/4t liquid smoke
- 1 tablespoon maple syrup
- 2 tablespoons garlic powder
- 2 tablespoons onion powder
- Juice of 1/2 lemon or lime
- 2 teaspoons smoked paprika
DIRECTIONS:
- preheat oven to 350
- slice pressed tofu as thin as possible
- mix all other ingredients together in a large bowl
- add sliced tofu to marinade and toss to coat
- add marinated tofu to a baking sheet and bake for 20 minutes. I like mine a little more well done and crispy on the edges. Bake an extra 10 minutes.
- Enjoy as is or in a sandwich or build a salad 👏
