Lazy Summers in Minnesota ~ that is exactly what this salad looks like!

Provencal Tuna Salad

Do you remember when a salad used too be that mean-spirited little bowl to the left of your dinner plate? Than one day, the salad was heaped right onto the dinner plate itself! It was the MEAL~ that’s how things stand in my house, I can’t imagine a meal without a salad. Yes that includes Break-Fast!

Don’t forget the fresh dill!

When my husband and I were dating the first time I made him brunch he looked at me and said “I don’t think I’ve ever had a salad for brunch before?” I said “Get use to it😂”

I love building big salads and this Provencal Tuna Salad always makes it’s appearance when I have fresh dill ready to be picked.

Add whatever veggies you like!

Chunks of tuna, olive oil, fresh lemon, onion, capers, and tomato all come together to prove that a can of tuna can become magical thing.

Please don’t forget the dill….it’s definitely what makes this salad so interesting. Feel free to add even more veggies in and experiment with your olives. I love everything about this salad and I know you will too!

Lets male a BIG SALAD FOR DINNER!

PROVENCAL TUNA SALAD

Ingredients:

  • Three 6 ounce cans of water packed albacore wild plant tuna, drained
  • 1 cup halved tomatoes
  • 1/2 cup Kalamata olive or your fave
  • 3 heaping tablespoons drained capers
  • 1/4 cup chopped red onion
  • 1/4 to 1/2 cup chopped fresh dill
  • 1/2 cup good quality olive oil
  • 1/2 cup fresh lemon juice
  • salt and freshly ground pepper
  • any other veggies of choice are optional

Directions:

  1. Turn the drained tuna into a large bowl, and break it into chunks with a fork. Fold in tomatoes, olives, capers, red onion, other veggies of choice like carrots, celery, and fresh dill. Pour in the olive oil and lemon juice. Add salt and pepper to taste. Toss to blend.
  2. If time allows, let stand at cool room temp for about an hour.
  3. Serve with crusty sourdough and salad greens. YUM.
